About Braaker Mühle Brot und Backwaren GmbH
Braaker Mühle Brot- und Backwaren GmbH was founded in 1859 and is now run by the sixth generation. Tim Lessau – master baker, and one of the first bread sommeliers in northern Germany – leads the family business, which operates around 30 shops and ten market stalls across Schleswig-Holstein and Hamburg. Since 1996, the historic mill at the company’s headquarters has been back in operation, supplying the entire demand for organic wholemeal flour. The quality of the products is rooted in traditional craftsmanship: carefully selected, mostly regional ingredients, long dough resting times, and a responsible approach to resources.
